Ingredients:
1. 500 grams: Rice
2. 500 grams: Sugar
3. 500 grams: Shredded Carrots
4. 250 grams: Ghee
5. 250 grams: Khoya (mawa)
6. 1/2 cup: Conconut Flakes
7. 1/2 cup: Pista
8. 1/2 cup: Raisins
9. 17 pc: Cloves
10. 15 pc: Cardamom (Choti Ilaychi)
11. 2-3 drops: Red Food Color
12. 2-3 drops: Green Food Color
Method
1. In pot heat enough water to boil rice; when water comes to a boil add 6 pieces of Cloves and 5 piece of Cardamom and stir, then add rice and stir once.
2. When rice has boiled remove from heat and strain in a colander and keep on side.
3. In same pot add Ghee and remaining Cloves and Cardamom and stir for 2 min. Then add a little sugar and stir again.
4. Then put a layer of rice, then a layer of carrots,then layer of sugar, then layer of rice, then carrots and rest of sugar on top. Then add a few drops of food color which is optional. (The rice will become soft from the water of the carrots)
5. Lay the raisins on top and leave on dum for 20-25 min
6. When rice has finished with the dum; then add pista, coconut flakes, and koya and mix well.
7. Serve hot
(** Never use a metal spoon to mix rice after it has been on dum...it breaks the rice apart..use a plastic utensil)
**(make sure when you boil the rice it does not become to soft because the rice has to be left on dum for about 20-25 mintues due to carrots)
(**Ingredients 1-3 same quantity(this recipe makes large quantity so ajust first ingredients as you wish like 1 cup of each...and then adjust the rest of garnish to your liking...**)
